Rock Shrimp & Bay Scallops with a Tomato Basil Sauce |
Ingredients:
- 1/2 lb. Rock Shrimp
- 1/2 lb. Bay Scallops
- 3 TBSP Olive Oil
- 2 Shallots, finely chopped
- 3 cloves Garlic, minced
- 2 large Tomatoes, peeled, seeded, and finely chopped
- 1/2 cup dry White Wine
- 2 TBSP fresh Basil, chopped
- Salt and Pepper
Directions:
Pour the first tablespoon of olive oil into a wok, coat the
wok with it. Bring the wok to a
high heat, when hot toss in the rock shrimp. Stir around every
15 seconds for 3-4 minutes
or until pink. Put shrimp in a separate bowl and set aside.
With the last two tablespoon of olive
oil again coat the wok this time toss in bay scallops,
shallots and garlic. Stir for 1 minute. Then add tomatoes
and wine, bring to a boil. and let
the tomatoes cook for 2 and 1/2 minutes. Add basil.
After the basil toss in the rock shrimp
and stir all together. Coat the shrimp with the sauce.
Salt and Pepper to taste. Pour over
pasta and serve immediately.
